This is a quick dinner salad. I prefer mine as soon as a honey mustard dressing and my husband likes his with ranch dressing. Use the dressing of your choice.

  2. 1 cup Italian-seasoned bread crumbs (such as Progressou00ae)
  3. u00bc cup grated Parmesan cheese
  4. 2 skinless, boneless chicken breasts
  5. u00bc teaspoon Cajun seasoning (such as Tony Chacheresu00ae)
  6. 1 cup olive oil
  7. 3 cups chopped lettuce
  8. 1 tomato, cut into wedges
  9. 2 carrots, grated
  10. 2 hard-boiled eggs, halved
  11. 6 tablespoons ranch dressing
